Chocolate Garbanzo Muffins

Many of us going through cancer or its treatments strive to eat a healthier diet.  However, at the same time, we all feel the need to indulge a bit in our diets, whether that’s because we are having trouble tolerating certain foods and want something we will have an easier time handling, we crave something sweet when we are having trouble tasting things that are blander, or we simply want to “reward” ourselves for getting through another day of kicking cancer’s butt.  Here is an interesting, tasty, somewhat indulgent, surprisingly healthy, and extremely easy to prepare recipe for satisfying our sweet tooth along the way. They are great to go with morning cup of coffee or tea or just as a quick snack during the day.  They are gluten and dairy free, and contain no white flour, white sugar or butter/margarine.  Try it out and let me know what you think!  In healing,

Chocolate Garbanzo Muffins

Ingredients:

1 (15 oz.) can of garbanzo beans, drained and rinsed (you can remove the outer skin of the beans if you prefer, but as the entire mix will be blended there is no need to do so)

3 large organic eggs

½ cup pure organic maple syrup

1/3 cup unsweetened cocoa powder (you can substitute cacao powder if you prefer)

1 tsp. baking soda

3 Tbsp. coconut oil, melted

1 tsp pure organic vanilla extract

1/3-1/2 cup dark chocolate chips (carob chips may be substituted)

Preparation:

Preheat oven to 350 degrees

Line 12 muffin cups with muffin papers (or lightly coat muffin tray with nonstick cooking spray)

Place all ingredients except chocolate chips in a blender and blend until smooth

Pour batter evenly into muffin cups

Add about 6 chocolate chips to each muffin, pressing them into the batter

Bake 12 minutes or until toothpick inserted into the center of the muffins comes out clean
